
It started as a scroll — one of those late-night “that looks good” reels that send you straight to the pantry. Luckily, Trader Joe’s had everything I needed for this easy weeknight pizza: smoky BBQ chicken, creamy Gouda, and bright, tangy pickled red onions for the finish.
It’s part comfort food, part weekend mood — and all from the freezer aisle.

What You Will Need:
1 Trader Joe’s Pizza Crust
½ to ¾ cup Trader Joe’s Organic Kansas City Style BBQ Sauce
1 package Trader Joe’s Hardwood Smoked Pulled Chicken
1½ cups Trader Joe’s Double Cream Gouda Cheese, shredded
Pickled Red Onion (see below)
Pickled Red Onion:
2½ cups thinly sliced red onion (about 1 large)
¾ cup red wine vinegar
1 cup water
1½ tablespoons sugar
1 teaspoon kosher salt

What You Will Need To Do:
To make the pickled onions:
Place the sliced onion in a heatproof container. In a small saucepan, whisk together the vinegar, water, sugar, and salt. Bring to a boil over medium heat, whisking to dissolve the sugar. Let simmer for 5 minutes. Remove from heat and carefully pour over the onions. Let sit for at least 1 hour, then cover and refrigerate until ready to use.
To assemble the pizza:
Preheat oven according to crust instructions.
In a medium bowl, stir together the pulled chicken and BBQ sauce until evenly coated.
Spread the mixture over the prepared pizza crust.
Top with shredded Gouda cheese. Bake until the cheese is melted and bubbly and the chicken is warmed through.
Remove from the oven and finish with pickled red onions on top just before serving.

Slice, serve, and savor — sweet, smoky, creamy, and tangy all in one bite.
