Gratitude doesn’t always arrive with fireworks. Sometimes it sneaks in on a quiet morning, with tortillas warming in the skillet and coffee brewing in the background. The kind of morning where you crack eggs, chop peppers, and realize without even meaning to that you’re saying thank you with every small motion.

There was a season in my life when gratitude felt like a chore. People told me to “keep a gratitude journal,” but honestly, writing I’m thankful for my health, my kids, my roof on repeat felt more like homework than holy. It wasn’t until I started cooking that gratitude became embodied; something I could taste, smell, and share.

Take breakfast tacos. They’re not fancy. They don’t scream “special occasion.” But when I cook them, I remember mornings when money was thin and tortillas stretched farther than we thought they would. I remember the relief of feeding little bellies with scrambled eggs and cheese. And now, when I brown sausage and crack eggs into the pan, I’m not just cooking. I’m remembering. I’m giving thanks for what was, and for what is.

  • 3 eggs
  • ½ lb breakfast sausage
  • ½ bell pepper, diced
  • ¼ onion, diced (optional)
  • ½ cup cheddar cheese, shredded
  • 4 (6-inch) tortillas
  • Salt and pepper, to taste
  • Cooking spray or a drizzle of oil
  1. In a skillet over medium heat, cook ½ lb breakfast sausage until browned, about 7–8 minutes. Remove and set aside.
  2. In the same skillet, sauté ½ diced bell pepper and ¼ diced onion (if using) until soft, 3–4 minutes.
  3. Crack 3 eggs into a bowl, whisk with a pinch of salt and pepper, then pour into the skillet with the peppers and onion. Cook, stirring gently, until just set, about 2–3 minutes.
  4. Stir the sausage back into the skillet. Sprinkle in ½ cup shredded cheddar cheese and let melt.
  5. Warm 2 tortillas in a dry skillet or directly over a low flame until soft and pliable.
  6. Fill each tortilla with a fourth of the egg and sausage mixture.
  7. Serve warm, maybe with salsa or avocado if you have it.
